Each year, we wait for late summer to mix up our Bramble Thyme Cider Sangria. It captures the not-too-sweet essence of late summer, with bold berry flavors and lingering herb undertones. Mix up a pitcher (we find it pairs well with watching a thunderstorm roll in)

makes 10 servings

To make the syrup:
▢ 1 cup water
▢ 1 cup sugar
▢ 1/2 pint raspberries
▢ 1/2 pint blackberries
▢ small bunch thyme
▢ 1 cup of peach nectar 


To make the Sangria:
▢  Mix 1 oz syrup, &
▢  7 ounces of a dry Cider!

 

  1. In a pot, combine all the ingredients. Mix over medium heat until the sugar has dissolved.
  2. Continue cooking 5 minutes (but do not boil)
  3. Strain the mixture through a fine mesh strainer and store in an airtight container.  Syrup keeps for 2 weeks!
